MENU

Apple Pie Bites // V, DF with substitutions

Brown Butter Pumpkin Shortbread

  • Serve on your favorite cookie serving dish.

INGREDIENTS FOR 6-8 SERVINGS

  • ½ c butter, 113g, browned
  • ⅓ c powdered sugar, 34g
  • 1⅛ c flour, 135g
  • ⅛ t salt
  • ½ c decadent pumpkin butter, 135g
  • ½ t vanilla
  • 1 t ground cinnamon
  • ½ t ground ginger
  • ⅛ t ground cloves
  • ⅛ t ground nutmeg

INSTRUCTIONS

  1. Cook butter on medium high for 3-5 minutes, until it becomes golden. Pour brown butter in a bowl and let cool.
  2. Mix the pumpkin butter and powdered sugar.
  3. Add cool brown butter and vanilla. Mix until fully incorporated.
  4. Mix flour, salt, and spices.
  5. Add dry ingredients to the wet and mix well.
  6. Place dough between two pieces of parchment paper, roll ~1/3in thick and freeze for 10-15 minutes. There's no need to flour the parchment.
  7. Use a 2¼ in ring to cut out cookies. Re-roll scraps and repeat process.
  8. Place cookies on baking sheet and bake at 350 degrees for 18-24 minutes.
  9. Remove cookies and let cool on rack.
  10. Glaze cookies, if desired.
  11. Remember: The thicker you roll the cookie, the longer it will take to bake. Watch carefully, as they will burn easily.

Apple Pie Bites

  • Serve with vanilla ice cream and caramel sauce.

INGREDIENTS FOR 8 SERVINGS

  • ¼ cup packed light brown sugar
  • 1 teaspoon apple pie spice, and additional apple pie spice (about ¼ teaspoon) for sprinkling on top of crescent rolls
  • 3 tablespoons unsalted butter, melted
  • ⅓ cup chopped pecans
  • 1 small Granny Smith apple, cored and sliced into 8 (½-inch) slices
  • 1 (8 ounce) tube Pillsbury Original crescent rolls

INSTRUCTIONS

  1. Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine brown sugar and apple pie spice. Set aside.
  3. Melt butter and toss apple slices in butter, set aside.
  4. Arrange crescent roll triangles on baking sheet lined with parchment paper. Evenly distribute brown sugar mixture onto each triangle.
  5. Sprinkle each triangle evenly with the chopped pecans.
  6. Place an apple slice on the wide end of each triangle. Wrap crescent roll dough around each apple.
  7. Brush each crescent roll with remaining butter. Sprinkle lightly with additional apple pie spice.
  8. Bake for 10 to 12 minutes, or until golden brown. Cool for 5 minutes before serving.
